Whole Wheat Bread
(2 loaves, double for 4 loaves)
3 1/2 C whole wheat flour
1/3 C gluten flour
1 1/4 Tbs instant yeast
Combine the above in the mixer.
2 1/2 C hot water
Add water all at once. Mix 1 minute. Cover and let rest 10 minutes.
1/3 C oil
1/3 C honey (or 1/2 C sugar)
1 Tbs lemon juice (or vinegar works fine)
1 Tbs salt
Add all at once. Beat 1 minute.
2 1/2 C whole wheat flour
Add flour one cup at a time, beating between cups until dough barely pulls away from the sides (it takes me about 2 cups). The dough is very soft.
Beat 10 minutes.
Preheat oven to lukewarm, then turn off. Shape dough into loaves and place in greased pans. Cover and rise dough in oven 30 minutes. Remove cloth, but do not remove pans from oven. Turn oven on to 350. Bake 30 minutes.
